Hi Nancy!
Here's a really QUICK recipe for Stuffed Mushrooms. I have used "Rondale" cheese -- they have different flavors. Our guests have enjoyed this recipe.

MUSHROOM FILLED WITH BOURSIN CHEESE
32 medium mushrooms, stems removed
1 6-oz. package Garlic & Herb Boursin cheese, at room temperature
Fill the cavity of each mushroom with about a teaspoon of the cheese, mounding it slightly. Put the stuffed mushroom on a baking sheet.
JUST BEFORE SERVING, broil the mushrooms, about 5 inches from the heat, until browned on top and heated through, about 3 minutes. The mushroom should be just barely cooked. If cooked too long, they will begin to release water. Serve immediately.

Note: This hors d'oeuvre can be assembled hours ahead of time. Put the stuffed mushroom on a baking sheet, cover them with plastic wrap and refrigerate. Broil just before serving, allowing perhaps a minute more if they're thoroughly chilled.
